Sweet baked cake with white chocolate, mato, raspberries, thyme and pine nuts


Baked cake is a classic specialty of northeastern France, which is usually baked with bacon, onion and sour cream. Like pizza or creeps, thin breads made from bread dough can also be covered with many other ingredients.

The sweet versions also know of wonder, like this sweet cake baked with mato, which has become a delicious summer recipe with white chocolate.

For 5-6 people

For the dough:

  • 250 g organic light spelt flour
  • 150 – 160 ml water
  • 3 tablespoons organic olive oil
  • 1 Pinch Salt
  • 1 Organic cannelloni pessic

For coverage:

  • 200g “mato” organic cheese or organic crème fraĂŽche
  • 1 Organic lemon, juice and zest
  • 1 Pinch organic ground vanilla
  • 4 tablespoons organic honey
  • 200 g Organic VIVANI vanilla white chocolate
  • 3-4 sprigs organic fresh thyme
  • 50 g pine nuts or organic almonds
  • 300 g organic fresh raspberries

PREPARATION: Cooking time > 9 – 12 minutes

  1. For the cake, knead all the ingredients with your hands until you get a soft and smooth dough. Add a little more flour according to consistency.
  2. Divide into 5 or 6 cakes on a floured work surface and spread them in the form of a thin cake and place in two baking trays lined with baking paper.
  3. For the coverage, mix the cheese with a little lemon curd, lemon juice, vanilla and 2 honey cucharaditas. Chop the white chocolate.
  4. Preheat the oven to 220 °C with hot air. Pre-cook the cake in the hot oven for 6 – 8 minutes until lightly golden.
  5. Spread the cake with the mixed cheese, sprinkle the pieces of chocolate and raspberries on top and then sprinkle with pine nuts and thyme leaves. Sprinkle with the rest of the honey if desired. Bake for another 3 – 4 minutes.
  6. Remove from the oven and serve while it is hot. If desired, it can be covered with some fresh raspberries.

TIP: Instead of thyme, lavender flowers go very well with white chocolate and raspberries.
