Amaranth is native to the Andean area but is cultivated today mainly in India. It is used sprinkled in soups, made pasta or served as a cereal at breakfast. Amaranth popcorn can also be made.

It is a very hardy plant whose seed and leaves can be consumed and are highly nutritious. In India it is common to consume fresh amaranth leaf, but in Europe we will only find amaranth in seed or derived from it, either in flour form or in granulates. It has a high nutritional value, providing many proteins, vegetable fats and fiber and is gluten-free. To be more precise, it contains 5 times more iron than wheat and twice as much calcium as milk. In the same way, it is very rich in fiber. By combining its resistance and high nutritional value, some predict that amaranth may be the soybean of the future.
Pleasant taste, somewhat reminiscent of beets. When consuming the whole seed, it is usually used sprinkled in soups or prepared as a garnish for a dish such as a couscous or polenta. In this case it must boil over low heat for 30 minutes in 3 volumes of liquid for each volume of amaranth. It can also be exploited as popcorn in a very hot pan and thereby make a rich food for breakfast. Finally, they can also be used to coat a croquette-type dough and then fry it.
