Uses of Xanthan rubber powder
Combine gluten-free homemade breads and make them fluffier.
Replace fat and egg in mayonnaise.
Thicken sauces, dressings, yogurts, juices, drinks, ice cream icing, etc.
Emulsify vinaigrettes.
Stabilize meringues.
Other thickeners such as agar-agar and guar gum are also available.

It acts at low concentrations.
It does not degrade over a wide pH range.
Resists baking and freezing.
It is soluble in hot and cold water.
It is odorless and tasteless.
How to use Xanthan gum
For liquid foods: mix between 2 and 4 g of xanthan gum for 1 liter of cold or hot liquid. To avoid the formation of lumps it is recommended to use a blender. Increase or decrease the amount of Xanthan gum to achieve the desired texture.
To use with flours: mix directly and stir.
For elaborations with fats: add then the oil or any fat. Stir until the desired consistency is achieved.
