Hatcho Miso is miso’s oldest variety and is made with soy and salt. It is of a dark color and with a very intense flavor.
Soya* (54.4%), water, salt, Koji spores (Aspergillus oryzae).
Use: Add at the end of the cooking of soups without boiling it. Miso is already salty so it is not necessary to add salt in the dishes prepared with this food. The eventual appearance of light lumps on the surface is due to the presence of an amino acid (triosine) that naturally develops in fermented miso.

It can contain traces of gluten.
