Combination of asparagus, peas and strawberries đ a delicious recipe, colorful and balanced, which will provide you with fiber, vitamins and antioxidants.
Ingredients 6 people
- 1 boot of organic asparagus
- 100 g organic strawberries đ
- 150 g organic fresh unsheathed peas
- 250 g organic fresh cheese
- 12 slices of organic whole wheat bread
- 1 clove of organic garlic
- 1 half organic lemon đ squeezed
- Organic mint leaves
- Olive oil, salt and pepper
Preparation:
- Cut the base of asparagus about 3 centimeters and remove the “beaks” from the stems with a peeler.
- In a pot, boil water with coarse salt. Dip the asparagus 10-12 minutes and check the cooking with a sharp knife. When they are tender, remove them from the water and put them in ice water so that they retain their beautiful color. Next, put the peas in the pot with boiling water for 15 minutes. Check the cooking before taking them out and put them in turn in ice water.
- In a bowl, mix the fresh cheese with the lemon juice, salt, pepper, half a clove of garlic and chopped mint leaves.
- Toast the slices of bread and rub them with the other half of the garlic. Pour a splash of olive oil over the toast. Spread with the ricotta mixture, then add the peas, asparagus and strawberries cut in half. Finally, put salt and pepper on the toast.
