The AA Capsigrany Natural 2020 from Alta Alella Mirgin is an organic sparkling wine with D.O. Cava, made exclusively with the native Pansa Rosada variety and with a philosophy of minimal intervention that seeks to express the terroir with maximum purity.
The grapes come from ecologically certified vineyards located in the Serralada de Marina Natural Park, very close to the Mediterranean, an environment that brings freshness and a unique character to the base grape and to the final result in the bottle.
The harvest is done manually to ensure the best quality, and after careful selection, a soft pressing is carried out to obtain the must, which ferments spontaneously thanks to the natural yeasts present in the grapes.
The second fermentation takes place in the bottle following the traditional champenoise method, and the cava matures in contact with its lees for a minimum of 15 months, building complexity and a fine and persistent bubble.
One of its distinctive points is that it is made without the addition of sulfur, which reinforces the clean and authentic profile and makes it an interesting choice for those looking for a more natural and environmentally friendly cava.
Tasting note: pale golden color, fine bubbles; on the nose, fresh red fruits (strawberry and raspberry), floral nuances and a touch of Mediterranean herbs appear; on the palate it is dry and vibrant, with balanced acidity, a slight minerality, creamy texture and a long and refreshing finish.
Enjoy it as an aperitif or to accompany seafood and light dishes, served between 6 and 8 °C.
