Macerated Carrots and Onion Salad with VITAE Orange and Mint

Ingredients:
100 ml Vitae Kombucha Taronja i Menta or to taste
2 Carrot
30 ml lemon juice
45 ml orange juice
1 onion
1 CS coconut sugar
1/2 cp pink Himalayan salt
1 Endive
2 CS of Tahin
Mixture of pink and black peppers to taste
4 CS pumpkin seeds
Tamari to taste
EVOO Oil

PREPARATION:

  • Peel the carrots and make strips.
  • Peel the onion and cut into very thin julienne with the mandolin.
  • Mix in a large bowl the lemon juice, orange juice, sugar and salt.
  • Add the carrot strips and the chopped onion and mix well.
  • Add the Vitae Kombucha Orange and Mint and mix with vegetables and other liquids, ensure that the vegetable is submerged.
  • Cover the bowl with a tea towel and let it macerate for at least 45′.
  • In a paella without oil lightly toast the pumpkin seeds and at the end add and mix a few drops of tamari. Reserve.
  • Drain the vegetables and emulsify the liquids in a small bowl with two tablespoons of tahin.
  • Cut the endive into four, serve it together with the carrot and macerated onion.
  • Season with pink and black pepper, finished grinding to taste.
  • Season with the sauce of the macerated with tahin, a thread of olive oil above the pumpkin seeds seasoned with Tamari
