The Wong Family Gluten Free White Chocolate and Lime Mochi is a baked product made from a glutinous rice flour dough that surrounds a creamy filling made from dairy products, white chocolate and lime. The combination seeks to combine the characteristic texture of mochi with a soft and creamy interior, in which the sweetness of the white chocolate contrasts with the fresher and citrusy profile of the lime.

The outer dough has a white color characteristic of the flour with which it is made and is slightly translucent. Inside, you can see the color of the ingredients that make up the filling. The product has a pleasant smell linked to the fresh ingredients used in its preparation.

The recipe combines white chocolate, lime juice and lime shavings with milk, cream and gelatin to create the filling. The dough is made with rice flour and water, while trehalose sugar completes the formulation. The result is a mochi with a very different combination of textures between the outside and its creamy interior.

This mochi is made in a workshop located in Barcelona. It is presented in a tray made mainly with sugar cane and a proportion of PLA, heat-sealed with a biodegradable film. The product can be sold both refrigerated and frozen, depending on the conservation needs.

In refrigerated format it should be kept between 1 and 4 °C and has a shelf life of approximately two to three days in the refrigerator. If presented frozen, it should be kept between -20 and -18 °C and can be kept for approximately two to three months in the freezer.

It is a gluten-free product. It is made in a factory that also uses crustaceans, sesame, fish, soy, dairy products, nuts and sulphites, information that must be taken into account in case of allergies or food intolerances.
