Why is potato starch stronger?
Starch is a combination of two polymers: amylose and amylopectin. Potato starch has a higher percentage of amylopectin than corn or wheat starch, which gives it greater structural integrity. This makes If You Care compostable bags stronger and more resistant than other bags made with cornstarch.
A truly sustainable option
The potatoes used are not intended for food: they are starch-rich varieties grown exclusively for their extraction. This means that food resources are not reduced. In addition, to obtain the same amount of starch as corn, potatoes need 40% less land and do not require artificial irrigation, only natural rainfall.
