Kuzu Celnat is a starch obtained from the wild root of Pueraria lobata, a perennial plant of the legume family traditionally used in Japan and other parts of Asia. The root is transformed to obtain a fine starch that stands out mainly for its thickening and gelling capacity.
In cooking, Kuzu can be used in a similar way to other starches, but it has a characteristic texture when dissolved and heated. It is useful for thickening sauces, creams, soups, purees, desserts or preparations where you want to achieve a denser consistency without excessively modifying the taste of the dish.
To use it correctly, it is advisable to first dissolve the necessary amount in a little cold liquid. It can then be added to the hot preparation while stirring until it thickens. This procedure helps to avoid the formation of lumps and allows better control of the final texture.
The composition is particularly simple, since the product is made exclusively with wild Pueraria lobata root starch. It does not contain sugar or palm oil and is indicated as gluten-free.
Kuzu has a long history of use in Japanese and Chinese cuisine and is a common ingredient in traditional recipes where a gelatinous, soft or creamy texture is sought. Its discreet taste makes it easy to use in both sweet and savory preparations.
Nutritionaly it is mainly made up of carbohydrates, with very low amounts of fats, sugars and proteins. A particularly interesting option to have in the pantry as a vegetable-based thickener with a single-ingredient formulation.
