Nobody knew what kale was and suddenly, boom!, the trendy vegetable. The point is that, for once, it is a trend that is more than deserved. Because kale leaves the table in terms of vitamins and minerals when you compare it with any other green leaf. It is rich in fiber, vitamin K, calcium and antioxidants, among many other very interesting nutrients. This pesto wouldn't be as spectacular without fresh basil, of course. In addition, it contains extra virgin olive oil, garlic, pumpkin and sunflower seeds, a little salt and a little nutritional yeast, which gives it a great cheese taste. Use it to accompany any meat or fish recipe, zucchini spaghetti with mackerel (we recommend this combination!), buckwheat crackers or whatever comes to mind, because you'll want to put that pesto everywhere, you'll see.
